But to begin with, let's explain what the freeze-drying method is, thanks to which we can enjoy the unique taste and aroma of herbs all year round. This process, also known as "freeze drying," involves removing water from frozen parsley, garlic, basil or any other plant. The modern method uses sublimation, which means going directly into steam. This eliminates impurities from the spices and prolongs the usefulness of the herbs, which we can successfully use in our own kitchen. Interestingly, freeze-drying is considered one of the more modern, but also healthier methods of food processing. Spices subjected to such processing retain about 90. percent of their nutritional values and vitamins. At the same time, they do not lose their appearance, color, aroma and, most importantly, taste.
