What is freeze-drying?

Freeze-drying, or sublimation drying, involves removing water from frozen raw material. It is a method of food preservation. Thanks to this process, fruit and vegetables gain a perfect crispness, retaining their full flavour, aroma, shape and most of their nutritional value.
